Sweet Sunday: Apples and Peanut Butter Crisp

The smell of peanut butter is the smell of heaven.  Especially when you have been dieting.  Err, I mean making a “life change”.  The smell of this weeks recipes have definitely played with the olfactory senses.  Warm and inviting, sweet and tempting, would all be words I would use to describe Apple and Peanut Butter Crisp.

This recipe comes from the Better Homes and Gardens “Ultimate Low Calorie Book”.  This is the third recipe from this book and I don’t plan on stopping anytime soon.  If you are interested in the other two recipes please see the links below.  Apple and Peanut Butter Crisp is a good way to get the deliciousness of peanut butter without totally giving up your resolutions.  It was a little hard to get a solid piece out of the pan, but that didn’t stop us.  There were no leftovers.   Please give these recipes a try.  I absolutely love them and I hope you will too!

Apples and Peanut Butter Crisp

6 medium red and/or green cooking apples, cored peeled, if desired and thinly sliced
2 tablespoons all-purpose flour
1 tablespoon packed brown sugar
2/3 cup quick-cooking rolled oats
2 tablespoons all-purpose flour
2 tablespoons packed brown sugar
1/4 cup peanut butter
2 tablespoons chopped peanuts

1. Preheat oven to 375 degrees.  Place apple slices in a 2 quart square baking dish.  Set aside.

2.  In a small bowl stir together the 2 tablespoons flour and the 1 tablespoon of brown sugar until well combined. 
3.  Sprinkle the flour mixture over the apple slices and toss to coat.

4.  Bake the apples covered for 15 minutes.  Meanwhile in a medium bowl combine rolled oats, the 2 tablespoons of flour, and the 2 tablespoons brown sugar.

5.  Using a fork stir in the peanut butter until mixture resembles coarse crumbs.  Stir in peanuts.

6.  Uncover apple mixture; sprinkle with oat mixture.

7.  Bake, uncovered 15 to 20 minutes more or until apples are tender and topping is golden.  Serve warm.

  4. Thanks so much guys. It was so fantastic and so easy. Nothing goes better together than apples and peanut butter. Ok, maybe chocolate and peanut butter or caramel and peanut butter or peanut butter and peanut butter. :)
